Hummus

Hummus is one of those foods that I simply can’t live without! It’s great anytime - as a snack on crackers, as a dip for veggies, as a spread for wraps and sandwiches. You really can’t go wrong with hummus. And it’s packed full of protein too.

Stuff you’ll need:

  • 1 tin of chickpeas, rinsed well (or the equivalent from dried chickpeas)
  • 1 large tbsp tahini
  • 2 tbsp olive oil
  • 1-2 tsp lemon juice
  • 1-2 cloves garlic
  • ¼ tsp salt
  • water

How to make it:

  1. Put all ingredients in a blender or food processor and blend until smooth. You may need to scrape down the sides a few times.
  2. If it’s too thick, add a little water.
  3. Serve garnished with some fresh parsley and more olive oil if you desire.
