Chocolate mousse

This is a ridiculously quick recipe that is sure to win over the soy sceptics. Great for dinner parties or if you need to feed a lot of people as it can be made ahead of time. Also makes a great week night treat, especially if you have kids - chocolate mud!

Stuff you’ll need:

  • 1 packet of silken tofu (350g or so)
  • 3 tbsp cocoa powder
  • 2 tbsp agave nectar
  • 1 tsp vanilla
  • a pinch of salt

How to make it:

  1. Put all ingredients in a blender / food processor and blend until combined
  2. Transfer mousse to ramekins or glasses (wine glasses work well) and put in the fridge to set
  3. Decorate with vegan cream, fruit, nuts or grated dark chocolate
  • This recipe makes about two average sized portions.
