Chocolate mousse
This is a ridiculously quick recipe that is sure to win over the soy sceptics. Great for dinner parties or if you need to feed a lot of people as it can be made ahead of time. Also makes a great week night treat, especially if you have kids - chocolate mud!
Stuff you’ll need:
- 1 packet of silken tofu (350g or so)
- 3 tbsp cocoa powder
- 2 tbsp agave nectar
- 1 tsp vanilla
- a pinch of salt
How to make it:
- Put all ingredients in a blender / food processor and blend until combined
- Transfer mousse to ramekins or glasses (wine glasses work well) and put in the fridge to set
- Decorate with vegan cream, fruit, nuts or grated dark chocolate
- This recipe makes about two average sized portions.
