Chocolate Liqueur Truffles
These Chocolate Liqueur Truffles make the perfect accompaniment to an afternoon coffee or a cup of tea after a dinner party. Also a great hit with kids if you substitute the liquor with juice. Simple to prepare and very addictive.

Stuff you’ll need:
- 100g dark vegan chocolate, melted
- 200g vegan digestive biscuits (cookies), crushed
- ½ c icing sugar
- 3 tbsp vegan margarine
- 3 tbsp cocoa
- 3 tbsp liqueur (such as Amaretto, Kahlua or Pimms)*
- 2 tsp vanilla
- extra cocoa powder, icing sugar or coconut

How to make them:
- Crush the digestive biscuits using a food processor
- In a large bowl combine the crushed biscuits, icing sugar and cocoa powder, mix well
- Melt the chocolate in a microwave or using a double boiler, add the margarine and combine until melted
- Add the chocolate and margarine mixture to the dry ingredients along with the vanilla and liqueur
- Mix well to achieve a sticky consistency that is slightly wet
- Roll the mixture into teaspoonful sized balls and coat in extra cocoa powder or coconut if desired
- Refrigerate until set

* Note that some liqueurs are not vegan, so be sure to check first if you’d like to keep your truffles cruelty free.
